Viewers of a sensitive disposition should look away now, this post contains all the gory details of our fabulous butchery lesson last week! Philip Denhart runs the pizza cafe Saturday Pizzas here at Ballymaloe which runs every Saturday afternoon. It is really worth checking out, delish pizzas made with organic ingredients. But Philip is a man of many talents and it turns out he is also a master butcher. Week One Down: What a Whirlwind!

I cannot believe week one is over already! Where does the time go! The first week here at Ballymaloe Cookery School was a blur of information, in the best possible way. Learning about processes and procedures is so important here, to ensure we can do everything “the Ballymaloe way”.  Everything from chopping and frying onions to rolling pastry and lining tart tins almost has to be re-learned, but that’s part of the fun!  Continue reading

A Whole New Chapter

Today has been a long time coming for me. Growing up in Cork, the name Ballymaloe has lurked around every food corner and jumped out in the most wonderful of ways at farmers markets, restaurants, bakery’s and a host of other food businesses for as long as I can remember. Since I was a 12 year old girl, starting to appreciate the wonders of food, Ballymaloe has been synonymous with the ethos of healthy, wholesome and sustainable local food doing good for everyone concerned. Bread Baking Adventures

I mentioned a little while ago that we were given the most wonderful wedding gift by two lovely friends. The gift involved a drive to a remote pier in West Cork, a tiny ferry and a ride in a rickety island land rover which all added to the charm that was our day at the Firehouse Bread School on Heir Island. New England Honeymoon

Anyone who knows me personally will tell you New England and me go hand in hand, which makes it so funny that I had never been there – until now.  I have always wanted to spend time in New England and have always loved everything that people associate with that part of the world: Seafood, Boats, Stripes, Seaside cottages. I have always found myself inspired by these things; our home, our wedding and our lives are surrounded by elements of New England. We are just back from our wonderful Honeymoon exploring the delights of Cape Cod and beyond and it was worth the wait! We rented a cottage on the beach for one week and then did some travelling to Nantucket and Newport, other pretty parts of New England. Continue reading

Eating Ireland’s Wild Atlantic Way

There are so many reasons I love being home in Cork. We all know that I extoll the virtues of Irish food ad nauseum, but a significant role is played by the stunning countryside and coastline on which my daily life plays out. I think, growing up in a place makes you almost immune, or at least complacent, to the positive attributes a place can have. It wasn’t until I left here that I began to see what so many people across the world appreciate and long for. We really are blessed with our lot here in Ireland (despite the rain!) The Wild Atlantic Way is a relatively new initiative that sims to encourage and increase in tourism along Irelands west coast and to help showcase everything that it has to offer. Continue reading

Food Adventures: Cork and Further Afield

Hi Folks! I know there is no point in apologising for the horrendously long break in service but I am going to anyway! I’m so sorry! This past 6 months have been a total madhouse! I have started a new job, moved country back to Ireland and given up my lovely little house in Whitstable! We are living back home with the parents so cooking has been reduced service lately!
