Chocolate Fudge Cake

Sometimes, nothing but chocolate will do. I usually believe birthdays are the perfect opportunity for a nice rich chocolate cake! I promised my other half  recently a birthday cake and it seemed like the perfect opportunity to try out a decedant cake recipe! This is based on a Nigella luxury cake recipe and turned out to be so good and quite easy that I may make it for others again! Just not too often, this one is a seriously rich chocolate hit so do take it easy! Its got unimaginable amounts of fat in it so really shouldnt be on a healthy eating blog but hey, some occasions are worth it!

Chocolate Fudge Cake

Serves 10 – 12

The fudgiest cake you will ever eat!!

For the cake:

  • 400g plain flour
  • 250g caster sugar
  • 100g muscovado sugar
  • 50g Cocoa powder
  • 1 tsp bicarbonate of soda
  • pinch salt
  • 3 eggs
  • 150ml Sour cream
  • 1 tsp vanilla extract
  • 125ml sunflower oil
  • 175g melted butter
  • 300ml water

For the decadant frosting:

  • 275g Icing sugar
  • 250g butter
  • 175g dark chocolate
  • 1 tspn vanilla extract
  1. Preheat the oven to 180 degrees celsius and line two 20cm sandwich tins with parchment paper.
  2. Melt the butter in a microwave.
  3. With a hand mixer, blend together oil and butter until well blended then add the water.
  4. In a separate bowl, blend beaten eggs, sour cream and vanilla extract.
  5. Mix all dry ingredients with the butter and oil mixture and blend well, then stir in egg mixture.
  6. Pour into cake tins and bake for 50 minutes to an hour, testing a number of times. Allow to cool on a wire rack.
  7. To make the frosting, beat butter until smooth and creamy. Sieve in the icing sugar and beat again. Add vanilla and chocolate and mix everything until smooth.
  8. Sandwich the cakes together with frosting and coat cake with the chocolate. I piped little florets on top too!!
  9. Try and control yourself!! 🙂
